Restaurant cooking is a lot different from home cooking. You can't tell the people at the table that the steaks aren't quite done yet or that an experimental side didn't quite work out. You've got to deliver and deliver consistently on what the menu promises, or your diners won't be back.
Food writer Jason Sheehan has a hilarious essay on CNN about why he has paid for his meal every time, with one very understandable exception (I won't spoil his punch line). But his essay does raise a point of debate: Do you pay the bill no matter what happens at a restaurant?
