Since chef Michael Peterson took over the kitchen at this very masculine-looking restaurant, the "cowboy" cuisine has gotten a lot more sophisticated. It's unlikely that any cattle herders ever tasted anything like Peterson's glorious 14-ounce, wood-grilled Kansas City Strip, a hunk of USDA prime beef served with red peppers, portabello mushrooms, and foie gras-baked Yukon potatoes.
