Best Place to Find Lupini Beans

Lupini beans come in two forms: ready to cook or ready to eat. The ready-to-cook variety is found at any Middle Eastern grocery, but we've found the ready-to-eat variety only at India Emporium, in Overland Park. For the uninitiated, lupini beans come in an olive jar. They look like yellow lima beans floating in brine. The tender meats must be freed from their papery skins before they can be eaten. The diner squeezes each bean between thumb and forefinger while biting on its edge until the chewy part pops into his or her mouth. It's kind of tricky, but the zesty flavor burst is worth it.
